Meet Chef Arnaldo Posadas - Alpha Delta Pi at Illinois

Meet Chef Arnaldo Posadas - Alpha Delta Pi at Illinois

Chef Arnaldo has been cooking for as long as he can remember. “I would see [chefs] cut so fast and think: How can I do that without cutting a finger?! This is amazing! How do you do this?” he says, explaining his childhood thoughts. His exposure to the food industry began at about twelve years old when he began selling sweet tapioca drinks in the Philippines. He moved to America in his early teenage years and later finished his vocational schooling in Chicago, Illinois. He furthered his graduate education at the CIA. No, not that CIA, the Culinary Institute of America, at least that what he told us.

Meet Chef Brian Dulany - Chef for the Men of Fiji Fraternity at Mizzou

Meet Chef Brian Dulany - Chef for the Men of Fiji Fraternity at Mizzou

It seems unlikely that a self proclaimed music-geek would make a career as a chef. But, for the guys at Phi Gamma Delta (FIJI) fraternity at Mizzou, Chef Brian is a match made in heaven. His taste in food is as varied as his taste in music. He enjoys trying new things. This sense of culinary adventure is apparent in the food he serves, like duck burgers, for example. Allowing young men to expand their horizons and try new things is a major passion of Brian’s.

Meet Chef Eichele Shafer - Alpha Delta Pi sorority at Texas A&M

Growing up on a dairy farm in Waller, a small town in big Texas, Chef Eichele knows first hand what life is like as a farm kid. “I have memories on the farm with my brother unloading bags of feed that were the size of us!” Her grandpa sold milk to Bluebell Ice Cream company and her grandma cooked all the time and cooked well. Growing up watching her grandmother and her mom cook inspired her. This inspiration lead her to the College of Culinary Arts at Johnson and Wales University in Denver. The university opened up the potential she had within herself.  Now the Chef for the women at the Alpha Delta Pi sorority at Texas A&M, Chef Eichele has found a great avenue to please her customers and satisfy her own passion for food.

Fraternity Dining - Chef Matt for the men of Sigma Nu at the University of Oregon

Okay so our chefs don't need recipes to provide the ridiculously good fraternity dining experience that we're known for.  But every now and then they'll look to inspiration and in this case Chef Matt Norris, Chef for the men of Sigma Nu at Oregon, did just that.  These Banh Mi sandwiches came right out of the College Chefs' cookbook.

This is what fraternity dining looks like when you have College Chefs.

"Don't Let My Blonde Hair Fool You" - Chef Brandi Perkins of Kappa Kappa Gamma @FSU

"Don't Let My Blonde Hair Fool You" - Chef Brandi Perkins of Kappa Kappa Gamma @FSU

Practically raised on a boat in sunny Florida, as her step-father would take her fishing Monday-Friday, Chef Brandi Perkins can filet a fish like no other--and she’ll challenge you to it!

Chef Brandi first fell in love with food back when her mother would take her to special meat markets in Florida as a child. “I would just get lost and mesmerized with all the different sorts of exotic meats,” says Brandi. Her mother encouraged her liking by purchasing some of the meats that Brandi would choose--such as garlic ham.

As a child Chef Brandi loved to play around with food at home, whipping up the best meals that she knew how and just having fun with everything. Her bright personality allowed her to create freely and openly which embedded her passion for cooking even more.

Throughout Brandi’s adult life she played around with other career options as well. She was in retail for 13 years and even a correctional officer for a short period of time right out of high school. However either field proved to be a fit for Brandi and she quickly became bored and uninterested--it was time for a drastic change and find a path that she enjoyed.

Fully committed and determined Chef Brandi made the ultimate decision to fund her culinary career by taking out student loans and enrolling in culinary school--in hopes to ignite the flame that was once there for cooking.

Once graduating from culinary school Chef Brandi finally felt worth towards something she really cared about and had a passion for. In 2013 Chef Brandi joined College Chefs and has been rocking it out ever since for the ladies of Kappa Kappa Gamma at Florida State University.

As always hats off to the chefs.
